    Carmel Forest Spa Resort is pleased to announce the launch of the English edition of its bestseller kosher cookbook: Carmel Forest Spa Resort – A Love Story. The book will be available in Isrotel Exclusive Collection's Cramim, Beresheet, Royal Beach Eilat hotels and of course, at Carmel Forest Spa Resort. The book will be sold for NIS128.     Since 1996 Carmel Forest Spa Resort's Carmel Restaurant provides its guests with unique recipes as well as well-known favorites based on local ingredients. The approx. 100 recipes chosen for the book were the ones most requested by our guests. Most recipes are accompanied by beautiful photographs. In 2012, due to popular demand, the Hebrew version of the Carmel Forest cookbook was published. Soon it became a bestseller, reprinted in 4 editions in the same number of years! The huge success of the cookbook and repeated requests by Carmel Forest English-speaking guests led to the translation of the Carmel Forest Spa Resort-A Love Story.

    The cookbook wishes to provide readers with more than just recipes. It places special emphasis on the cooking methods used at the resort's restaurant. The way that cooking traditions from the Jewish Diaspora were influenced by the Carmel's local Druze tastes, aromas and traditions. Indeed, there is a special chapter dedicated to the Druze Cuisine. The cookbook recipes include main courses, brunches, appetizers, salads, soups, breads and desserts.  Readers will find meat and fish dishes as well as vegetarian dishes and desserts. All recipes are kosher, some are gluten-free.

    The Carmel Forest restaurant team led by Chef Amir Kalfon found the exact balance between choosing the ingredients and cooking methods with the best nutritional values while always surprising and indulging the restaurant's guests. The best term to describe eating in Carmel Forest's restaurant is "culinary adventure". We hoped that our guests will take that special adventure along with them after leaving the resort.

    Carmel Forest Million Dollar Salad - Recipe

    This dish has a wealth of the best produce, which earned the salad its name. There are fresh herbs, almonds, seeds, cranberries and sumac, a tart purple spice used in Mediterranean cuisine.

     

    Serves 6

    For the salad

    4 cups green onion, chopped

    4 cups parsley, finely chopped

    2 cups fresh mint, chopped

    1 cup roasted almonds, crushed

    1 cup roasted peanuts, crushed

    1/3 cup roasted sunflower seeds

    1/3 cup roasted pumpkin seeds

    1 cup dried cranberries

     

    For the dressing

    ½ cup olive oil

    1/3 cup fresh lemon juice

    1 Tbsp. sumac

    Salt

    Freshly ground pepper

     

    1. To prepare the dressing: Shake all the ingredients in a jar with a tight lid. Taste and adjust the seasoning.
    2. To make the salad: In a bowl, toss herbs, seeds and nuts. Add ½ cup of the dressing, Taste and add moredressing if needed.
    3. Divide among serving bowls and serve.

    Serving option: We sometimes serve this salad wrapped in flat Druse pita bread.

    During pomegranate season, we replace the dried cranberries with fresh pomegranate seeds.
